Hibiscus kisel , diets nr 1,2,5,7,10
Dried hibiscus berries 8 gr, sugar 24 gr, starch 10 gr, lemon acid 0.2 gr, exit 200.
Wash berries, chop, add in not oxidizing dish, add hot water and boil 15 min, filter, add sugar, lemon acid, boil and faster mixing adding diluted starch. Again lead till boiling, add in glasses or vases, sprinkle sugar, cold. For diet nr 1 a lemon acid not ads. Smooth kisel, without oil on a top, light brown colour, sweet-sour taste, half liquid consistence.
Sour milk jelly.
Diets nr 2, 5,7,9,10
Sour milk 75 ml, sugar 1/4 , vanilla 0.01 gr, gelatine 2,7 gr, jam 20 ml, exit 100/20.
In boiling water add sugar, wetting gelatine, mix his till diluting gelatine, cool till 50C. Sour milk mix, add vanilla, and pour over a sugar-sweet syrup and add in forms. Cold till congeal on 8C, before serve form put for 3 min in hot water, put jelly in forms, and pour over a jam.Good cold jelly with jam, white colour, sour milk with sugar and vanilla taste, consistence is tender , elast.
Vanilla cream 1,2.
Creams 70 ml, sugar powder 20 gr, gelatine 2 gr, vanilla 0.01 gr, exit 100.
Creams cold, add vanilla, shake till thick foam, mixing adding powder sugar.
Gelatine wet, for 60 min, filter, and put on gauze for diluting. Ready gelatine with thin flow add in shaken creams and mix, after add in form, cold. Serve in forms.
Same mass, white creamy ,sweet creams with vanilla taste, dense consistence , not rubbery.
Snowballs diets nr 1,2,5,7,10
Eggs 2 pieces, milk 150 gr, sugar powder 35 gr, vanilla 0.02 gr, flour 1.5 gr, exit 220.
White eggs cold ,shake adding sugar powder on ten gr, milk lead till boiling, put in his with tea.sp. white eggs, cook 5 min. Snowballs take with skimmer and put in forms.Yolk rub with sugar powder, dilute with hot milk, and cook on water bath till thickness. After add vanilla, cold. In serve pour over with sauce.
Kvas brans ,diets nr 1,2,5,7,10
Millet brans 200 gr, sugar 15 gr, water 270 ml, lemon 26 gr, yeast baker 5 gr, exit 200.
Brans and lemon acid add in hot water, lead till boiling, cook for hour, or infuse for 3 hours, filter, cold till 20C, add sugar, yeasts, and put in warm place for fermenting, before serve add lemon juice, for diet nr 1 juice not ads.
Taste is sweet-sour, with lemon smell, with bubbles of gas, grey colour.
Carrot juice with lemon, diet nr 2.
Carrot 371 gr, sugar 20 gr, water 20 ml, exit 200.
In boiling water add lemon peel, sugar, lead till boiling, cold. Cleaned ,and washed carrot shred, add in received syrup, press through sieve, add lemon juice.
Carrot taste, sweet with light sour, orange colour.
