One kg of pectin prepare ,warm in pot, add 500 gr of sugar, lead till boiling and cook on weak fire ten min.After add in vases forms and cold. Serve with fruit syrup or creams.
Gooseberry jam with vanilla.
Wash beries, prick of wood stick, sprinkle vodka as one small glass for 2 kg berries and infuse in cold for 6 hours.Syrup cook of 1.3 kg a sugar and glass of water and one kg of berries.And in boiling syrup add berries and cook on 5 min. Cooled surup filter and lead till boiling.And berries again add in boiling syrup,and again filter, cool. And third time boil syrup, add berries,and cook till ready,foam remove, and in ready jam put powder vanilla.
Jam of gooseberry and raspberry.
In boiling syrup put berries and cook for method one.And for 700 gr of berries is 300 gr of rasberry, 1.2 kg of sugar, 1.5 glass of water.
Jam of gooseberry with oregano aroma.
Wash berries, prick with and wood stick, add cold water, infuse 8 hours, or since evening to morning. After water filter, and use her for syrup cooking.And syrup cook of 1.2 kg a sugar and 2 glasses of water for one kg of berries. And for a keeping green colour in water as for syrup cook are 20 gr of cherry leafs, and for aroma cook two twigs of oregano. After this infusion filter and use for jam cook. And berries put in boiling syrup, lead till boiling, cool, filter, boil, and again add in berries.
Dessert drink of gooseberry.
In prunes infusion add berries gooseberry, add sugar, pink, cinnamon, peel orange.Boil 7 min, turn off fire and filter,and add diluted potato starch,lead till boiling. Before serve in glasses put 2 prunes , strawberry and one cube of ice.
6 portions is 0.5 glass of gooseberry, 6 prunes, 0.5 glass of strawbery, 0.5 glass of sugar, tea.sp. potat starch, one l. of water, 6 cubes of ice, cinnamon, pink, peel of orange by taste.
Gooseberry cocktail.
Ready berries cook till softness, rub through sieve, cool. Juice received with yolk, cold milk, honey, brandy mix in shaker for 2 min, add 2 cubes of ice.
4 portions are 2 glasses gooseberry juice, glass of cold pasteurized milk, 4 yolks, 4 tbl.sp. of honey, one tea.sp. brandy, or rum, ten cubes of ice.
