Botvinya is all year.

 In zoz for 2018 Larisa  from Chelyabinsk asked to share recipe for a cooking beetroot. Cook beet with peel, filter, cool beet. And separately chop petioles and beet top.  Petioles cook in salted water, add beet top, boil 3 min , turn off fire, cool. And boiled beet clean,shred, add with top of beet. Add chopped hard-boiled eggs, green onion, dill , cucumbers, all to mix. Add in cooled infusion, sour with apple vinegar. Keep in refrigerator, serve in add fromage.

 As on winter in restaurants, sometimes cooking beetroot, but without a top of beet and cucumber. And taste is other, as for a good reason her calls botvinya ,  and for  a real beetroot cook for every year, you can before freeze a beet top  for winter. Am always doing this.
