A.vulgaris Lam.
Apricote marmalade.
Wash fruits, filter, clean, add in plate with sugar, mix with a wood spoon, for dilute all sugar, and add in pot for jam, keep on weak fire ,after put on strong fire and cook , mixing with a wood scoop, if marmalade not secretion juice,thus he is ready.
For one kg of apricots, use are 600 gr of sugar.
Marmelade of apricots with peel.
Ripe apricots wash, cut on halves, remove stones, add in sugar in pot, cook, mixing till thick mass, as hot add in ars, close with pergament sheet and fix.
As one kg apricots are 500 gr of sugar.
Jam of dried apricots.
Dry apricots select, add in pot,add water cold, infuse are 15 minutes, wash cold water for three times and infuse are 6 hours, and of fruits remove stones, knead theirs, nuclei remove, and cut fruits, filter water where they are kept, add sugar, cook ,like syrup.And in boiling syrup add fruits and nucleuses, cook ten minutes.A peel of mandarine or orange to shred, add in boiling jam, cook ten minutes, and jam is ready.
And for 500 gr of dried fruits are one kg of sugar, 4 tbl.sp. of water, peel of orange or 2 mandarines.
