Cleaned apples chop, and put in oven in pot, and in 20 min. add sugar as one kg of sugar for one kg of apples and keep till thickness.And on ending cooking add chopped orange peel, ginger, pepper black by taste.
Mix, add in wetted towel, wrap with rope and put under big stone.And in 3 days cheese is ready. Keep cheese in dry cool place.
Marmalade.
Washed apples and cleaned bake in oven, and rub through sieve.And in puree add sugar, and in mixing often cook on weak fire till thickness. Hot marmalade add in warm bottles,add sugar, cool, close a pergament sheet.
Keep in dry, cool place.
As one kg of apples are 600 gr of sugar.
Apple puree.
As prepare same apples, but pieces not bake, just cook in water and sugar, add in 2 times less as one kg of puree use are 200 gr.And ready puree add in boiled bottles, close a cellophane or pergament sheet after boiling theirs in water for 20 min.
And of puree you can cook kisels, sauces, as to sweet, meat and vegetable dishes.
Dried apples.
As very good method for apples prepare. As wash apples, dry, cut on pieces , also you can dry theirs in oven or in good ventilated room.Dried apples good use for compotes, pies, kvas, dishes different, spices.
Apple candies.
Washed apples clean, cut and cook in boiling syrup till a brown and transparent theirs. After sprinkle with mixture s of sugar, chopped orange peels, pink, cinnamon, and cook again till syrup boiling. After apples remove and put on form, sprinkle a sugar powder and dry in oven.
Keep in jar of glass.
