Sauce Charny.
2 kg of apples, 2 glasses of sugar, 1/2 glass of water, 4 tbl.sp. of melted oil, 2 tea.sp. of grinded red pepper one tea.sp. of nutmeg, pink, curcuma , ginger, caraway, and cinnamon by taste.
Wash and clean apples, cut on cubes, add water and cook till ready. Remove lid and evaporate for water all.In a deep pan warm melted oil, and caraway, and grinded black pepper, mix. In three min add apples, and cook on strong fire.Add sugar, mix is must be a thick, like jam. Turn off fire, serve as cold with buckwheat, rice or vegetable ragout.
Nut s fondant.
1.5 glass of nuts grinded, as walnut, almond or hazelnut, same are milk, sugar, 2 tbl.sp. butter oil.
In pot mix all, and put on middle fire, mix 15 min,and after weak fire. In thick mass put her on spread oil a form, and cold. Hardening fondant cut on the pieces.
